Crafting has always been second nature to me. I can make something out of nothing. I love to create things and go through the process and then sit back and look at the end results and say…Wow! I made that. I find the most joy over making things that cost me little or nothing to make or create. Not because I am a cheap person but, to just show myself how creative and inventive I can be.

So, it’s that time of year when the weather is beginning to warm up and most people are turning their air conditioners on full blast. I know here in the south, we sort of “skipped” over the winter season since we never experienced extremely cold weather for a long period of time. I only recall turning my heater on in my home just a couple of times during those, so-called winter months. 5 Boneless, Skinless, Chicken Breast
2 Cans Chicken Broth
2 Cans Great Northern Beans, rinsed and drained
2 Cans Green Chiles, diced
1 Large onion, diced
4 garlic cloves, minced
4-6 TBSP ground Cumin
Salt & Pepper to taste
Boil chicken until done, then shred it. Add the remaining ingredients to a slow cooker. Let it cook for 2-4 hours. The longer it cooks the better. To thicken it, add a packet of white gravy mix. Garnish with scallions, sharp cheddar cheese and sour cream. Serve with corn...
